Simple Chicken and Potatoes

4 pieces of chicken (I used all legs, but any cut would do.)
4 medium potatoes, cubed
salt, pepper, cumin and allspice to taste (an even sprinkling of all will do).
2-3 TBS olive oil
1/8-1/4 cup fresh lemon juice

Heat oven to 350F. Place chicken and potatoes (skinned or not) into a deep baking dish. Season and coat with oil and lemon juice. Stir potatoes and turn chicken to make sure all sides are well coated. Cover with foil and bake for 30min. Remove foil and increase temperature to 400F and bake another 30min or until potatoes and chicken are brown. Serve.

Merry Christmas everyone! I hope you all have enjoyed the holiday season and are looking forward to the new year. I can't believe it is almost here. I am not even used to writing 2007 yet! Yikes.

The Kids Love to Sing

My kids are starting to sing. Gabriel loves Jingle Bells and he sings it pretty well. He also likes Twinkle Little Star and sings along with his favorite cartoons. Andrew's favorite song is Old McDonald, which goes "Cow EIEIO, Cow EIEIO ...."
